Description
Sumac or sumac is dark crimson in color and its taste is acidic. Its main use is in kebabs, usually together with some other hot spice (eg cumin, chili, cayenne pepper) or cumin. It is one of the basic spices in the cuisine of Middle Eastern countries. We can use it instead of lemon, to give acidity but also a little color to grilled fatty meats, lamb ribs, pork chops, pancetta and chicken legs. It is also used in falafel and other legume meatballs, as well as in hummus instead of lemon.
